CREAMY, ‘OLD FASHIONED RICE PUDDING’ FOR A SWEET TREAT: TRY THE RECIPE

Should you’re vegetarian, the writer recommends swapping rooster for canned jackfruit, however tofu, your favourite plant-based meat substitute, and even further beans work nicely too.

BBQ Hen Nachos

Yield: Serves 4-6

INGREDIENTS: 

eight ouncestortilla chips (rather less than a normal bag) 

2 cups sharp cheddar cheese, freshly shredded 

1 cup black beans, drained 

½ lb skinless rooster breasts, cooked and shredded (rotisserie is okay) 

1 cup of BBQ sauce, and extra for topping

½ avocado, diced 

¼ purple onion, finely diced 

¼ cup chopped inexperienced onions

¼ cup chopped recent cilantro

1 jalapeño, thinly sliced 

Bitter cream, for topping

INSTRUCTIONS: 

1. Preheat the oven to 425 F.

2. Organize the tortilla chips on a rimmed baking sheet in an excellent layer. High chips with cheddar cheese, and black beans. 

3. In a small bowl combine collectively shredded rooster breast and 1 cup of your favourite BBQ sauce till the rooster is evenly coated. High chips with BBQ rooster and bake for 10-15 minutes or till the cheese is effervescent. 

4. Drizzle a bit extra BBQ sauce to the tops of nachos. 

5. High nachos with avocado, purple onion, inexperienced onions, cilantro and jalapeno. Dollop the bitter cream in 4-5 components of the nachos and serve instantly.
